Rubies in the Rubble

Rubies in the Rubble is on a mission to save the planet one jar at a time. How? By turning fruit and veg destined for landfill into tasty relishes that are simply too good to refuse. The problem of food waste was first bought to founder Jenny’s attentions after she witnessed the amount of discarded produce at fruit and veg markets across London. Perfectly edible mangoes, cranberries and tomatoes were going to waste due to aesthetic imperfections, over-forecasted demand or inefficient storing and distribution.

Over 1/3 of all produce never reaches our plates. This is equivalent to 1.3 billion tonnes of food worldwide every year. Jenny wanted to make a dent in these figures, and so she set about getting creative with surplus fruit and veg. Armed with some family recipes and a car boot full of rescued produce from the New Covent Garden market, the experimentation in the kitchen began... and the rest is history! 

Rubies in the Rubble is providing a delicious and practical solution to food waste; they don’t discriminate, it’s whats on the inside that counts after all!
